Between medicating kittens, vaccinating dogs, and arguing with racoons I found time to bake these incredible cupcakes. I just love me a boozy cupcake :)
This recipe is all about the frosting. Sure, a light fluffy vanilla cupcake is essential- but it's the depth of flavor in this frosting that throws it over the top. I used the vanilla cupcake recipe from Vegan Cupcakes Take Over the World and threw about 7 sliced strawberries in the batter.
1/2 of Earth Balance, softened
1/2 cup on nonhydrogenated vegetable shortening
3 cups of confectioners sugar
2 tbs of vegan Chardonnay (even my omni friends think using fish bladders for fine is gross!)
1.Beat the Earth Balance and vegetable shortening until fluffy, about 3 minutes.
2. Add the confectioners sugar, one cup at a time. Make sure to scrap down your bowl!
3. Add the chardonnay one tablespoon at a time.
Frost your cupcakes liberally and enjoy.
